Cutting boards should be cleaned with a powder cleanser, such as Bon Ami, to remove any food from the cut marks. It is also important to disinfect these surfaces. Wooden cutting boards can be disinfected by soaking for two minutes in a solution of 3 tablespoons of bleach per gallon of warm water. Discard cutting boards, cooking utensils, and cookware when it becomes chipped, cracked or heavily grooved.
